The finest natural ingredients from the area are selected. The flour comes from a 300-year-old stone mill located on the Río de la Miel, and the sea salt from the salt flats of Chiclana.

Radi's Sister, our resident wild yeast sourdough starter, is maintained and fed for days and is the basis of all our breads from day one.

The untarnished and pure ingredients are combined and the dough rested, folded, and ultimately shaped by hand into loaves.

Time allows for perfect  fermentation and long cold proofing develops  strength, flavour, texture, and character into every batch.

Baked to a crisp rich golden crust with a soft, open crumb on the third day. Sourdough is a beautiful thing, natures bread is a wonder.

Resist the sensory temptation to tear it appart and devour. Resist and allow further time for the bread to rest, cool and mature. 5/6 hours is ideal, then demolish it.
